Infuse on low heat for about an hour. 2) Strain. Remove solids. Optionally, flatten solids on parchment paper and dehydrate at 125F for 24hrs for ginger candy. 3) Add strained syrup to big container 4) Add 1/4 cup lemon juice 5) Add yeast. Mix gently until homogenous. 6) Add water. Mix. 7) Funnel into bottles and burp each bottle daily.
