Honey Butter Pancakes - https://www.youtube.com/watch?v=3tvgLv5mhyE Ingredients Honey butter: - 1 stick butter + 1/3 cup honey + sea salt Pancake batter: - 2 eggs - 1 tbsp honey - 1.5 cups (200g) all purpose flour - 4.5 tbsp (55g) sugar - 1 tsp salt - 1 tsp baking powder - 2 tbsp (30g) melted butter - 0.65 cups (150ml) milk Finishing: - Flaky salt - Honeycomb - Butter Preparation 1) Make honey butter: Mix butter, honey, and sea salt together until homogenous. Set aside. 2) Make batter: Mix eggs and honey until homogenous. In separate bowl, mix dry ingredients together. Then add melted butter and milk. Mix until homogenous. 3) Add juice of half a lime. Acid helps activate baking powder to make them fluffy/bubbly. Mix 4) Optional: Cover batter with plastic wrap, let rest at room temp for 1hr. Gives baking powder more time to activate. 5) Grease pan on low heat with very small amount of butter. Pour batter into pan. Cook for 5-7 minutes while it rises slowly. Flip when pancake has set sufficiently. Cook another 2-4 minutes. 6) Remove pancake from pan. Add enough honey butter mixture to coat the bottom of the pan. Add pancake back to pan 7) Cook pancake in honey butter another 5-ish minutes until caramelized and crispy exterior 8) Top with flaky salt, honeycomb, and butter.
