Adapted from https://www.mommysfabulousfinds.com/sour-cream-chicken/ Ingredients: - 3-4 chicken breasts - 1 cup sour cream - 1 cup mozzarella, shredded or thin-sliced - 3/4 cup Parmesan, grated - 2 tbsp lemon juice - 1 tsp dried oregano - 1 tsp dried basil - 1 tsp garlic powder - 1/2 tsp salt - 1/2 tsp pepper - 2 cups Panko bread crumbs - Parsley chopped, for garnish Preparation: 1) Preheat oven to 375F. 2) Lightly coat a 9x13 baking dish with olive oil. 3) Mix together sour cream with a 1/2 cup of Parmesan, lemon juice, oregano, basil, garlic powder, salt and pepper. 4) Lay your chicken breasts in baking dish, top each with mozzarella cheese. Spread sour cream mixture over the chicken. 5) Top with bread crumbs and remaining Parmesan. Cook for 55 minutes, or until internal temp of the chicken reaches 165F. Thinner breasts might only need 40-45 minutes. 6) Rest for 5 minutes. Garnish with parsley.
